Waxberry sorbet with green bean cake from the Mandarin Oriental Pudong

If you are too hot to queue for green bean soup, you may prefer Chef Tony's green bean cake with mint. It makes the laborious trek to Pudong worthwhile even under the scorching sun.

Chef Tony Lu and his culinary team at Yongyiting, the Chinese restaurant at the Mandarin Oriental Pudong, are famous for sourcing local and seasonal ingredients and presenting them as part of their new Shanghai cuisine.

For the humid and hazy summer ahead, Chef Lu has created the zesty and fruity dessert using local ingredients that are often "overlooked".

Visually, the pink waxberry sorbet looks festive beside the green bean cake. A spoonful of sweet-sour waxberry sorbet in the mouth tickles the taste buds into anticipation for the green bean cake, which arrives minty and fresh on the palate.

The cake gives the dessert the solid finish it deserves.
